My Long Rice Paper Cakes: A Delicious Tradition

Rice paper cake is a local specialty in Ben Tre Province, Southern Vietnam made of soft rice and coconut milk roasted over hot coal. But while all provinces produce the tasty delicacy, Mu Long is especially known for its unique recipe which is especially meaty, aromatic and of course delectable.

 

My Long has three types of rice paper cakes: Rice paper with coconut but no milk; Rice paper with milk but no coconut; And a special rice paper with coconut, milk and hen eggs. Moreover, they have another kind which is rolled with shrimp, meat and fish.

 

Aside from its extraordinarily tasty rice paper cake, Mu Long also uses a special kind of rice that is exceptionally soft and a high quality coconut milk that cannot be found anywhere else. For this, Mu Long rice paper cake is something that both local residents and foreign tourists crave for. In fact, the special recipe is so in demand that it is being exported all over the world.

 

The process of making rice paper cakes begins by soaking the flour under water. Copra or dried coconut is then removed from the inside of the coconut. Next, the rice flour is husked and mixed with coconut milk. Lastly, the rice paper is coated and dried under natural sunlight early morning of the next day.

 

There is also a one-of-a-kind stove used in making rice paper cakes that can only be found in Nghia Huan. Rice paper cake making is a tradition in Mu Long that has lasted through time because of the genuine art, skills and passion that its people have been putting into it.
